Flax seed is hailed as a super food. It has been domesticated by humans for thousands of years. The plant is 100% useable with the most common use being textiles and linseed oil.  This little seed has recently been pulled to the forefront of the baking community due to it’s qualities of binding.

When combined with water ground flax will gel. They become an excellent substitute for chicken eggs that can be used in vegan and gluten free baking. The recipe is simple, 1 tablespoon of ground flax seed to 3 tablespoons of warm water. Mix, let set for 10 minutes, and use just like the other eggs.
