White GravyOriginally published in November, 2011, I thought I would revisit this versatile and vibrant vegan gravy. It is simple, yet packed with flavor, and can pair with any number of tasty entrees, especially Portobello Steaks with mashed potatoes and roasted asparagus. Or try it over simple biscuits. Vegan White Gravy
Serves 4
Vegan White gravy that can be served for a dinner or featured in biscuits and gravy for breakfast.

Ingredients
  1. 2 tbsp margarine, good quality
  2. 2 tbsp arrowroot
  3. 1/2 cup vegetable stock
  4. 1/2 Coconut Milk, full fat
Instructions
  1. In a medium stock pot, heat up the vegetable stock and margarine.
  2. In a separate bowl, mix a small amount of water in with the arrowroot. Stir until the powder dissolves, forming a slurry.
  3. Add the arrowroot slurry to the vegetable broth. Cook for a few more minutes, until the broth and slurry are incorporated.
  4. Stir in the coconut milk
  5. Season with salt & pepper.
  6. Serve with Tofurkey or any other alternative protein dish.
  7. You can also add vegan sausage to make a breakfast gravy.
