Quinoa MuffinsI had the opportunity to teach cooking classes at Luci’s Healthy Marketplace, in Phoenix. This is one of the recipes I used to show students how easy it is to prepare great tasting and healthy food for the family.

 

 

 

Quinoa Muffins
Tasty gluten free muffins made with high protein quinoa.

Ingredients
  1. ½ cup quinoa flakes
  2. ½ cup quinoa flour
  3. 2 tbsp agave Syrup or maple syrup
  4. 2 very ripe bananas
  5. 1 peach, diced
  6. 2 tsp baking powder
  7. 1 tsp baking soda
  8. ½ tsp salt
  9. 2 “eggs” Egg Replacer- (1 ½ tsp egg replacer mixed with 2 tbsp warm water equals 1 egg)
Instructions
  1. Mix the dry and wet ingredients separately.
  2. Add the wet to the dry and mix thoroughly.
  3. Spray a muffin tin with cooking spray, and fill with muffin mixture.
  4. Bake in a 400 degree oven for 23-25 minutes.
Notes
  1. Serve warm with margarine and jam.
