National Potato Month is underway and I hope you are all enjoying this glorious, versatile food. If you’re a long-time reader of this blog, you’ll know that potatoes are one of my favorite foods — and a favorite of the Spouse as well.
In honor of this month-long celebration, take a look back at some of the recipes I’ve shared that feature the potato.
Roasted Rosemary Potatoes
Red potatoes are perfect for roasting in the oven. Add a bit of oil, rosemary, and salt and pepper and you have a wonderful side dish for quinoa cakes, mushroom steaks, or whatever strikes your fancy.
Vegan Whipped Potatoes
Wondering if it is possible to make perfect whipped or mashed potatoes without butter or dairy? It is — and they taste great. For a variation, add a bit of garlic or mix with chilies and corn.
Potato Salad
There may not be a single recipe for a perfect potato salad, but this one comes very close in our house. Developed and tweaked over several years, it uses dill, turmeric and red onion to give it a bit of a kick.
Cabbage & Potato Soup
This soup started out as an “end of the week” creation that has quickly become a standard in our diet. The stacked flavors of fennel, fenugreek, tumeric, and ginger on top of the foundation of potatoes and carrots are delightful. Thow in onions, carrots, and spinach and you have a hearty, nutritious, and flavorful soup.
