I had the opportunity to teach cooking classes at Luci’s Healthy Marketplace, in Phoenix. This is one of the recipes I used to show students how easy it is to prepare great tasting and healthy food for the family.
- 6-8 red potatoes
- Fresh Rosemary
- Sunflower Oil
- Salt & Pepper
- Cut the potatoes into wedges and season with rosemary, olive oil, and salt and pepper.
- Lay the potatoes out on a sheet pan sprayed with pan coating, and cook in a 400 degree oven for 15-17 minutes, or until the potatoes are crunchy on the outside and soft in the middle.
